  2. In a large mixing bowl, beat the softened butter and granulated sugar until creamy.
  3. Add the eggs (if using) one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients and milk, alternating between them, and mix until just combined.
  5. Divide the batter equally between the cake pans and smooth the tops.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the strawberry filling. In a medium saucepan, combine the strawberries, granulated sugar, and lemon juice. Cook over medium heat for 5-7 minutes until the strawberries soften and release their juices. Remove from heat and let it cool.
  9. For the cream frosting, whip the chilled heavy cream, confectioners' sugar, and vanilla extract until stiff peaks form.
  10. To assemble the cake, place one layer on a serving plate and spread the strawberry filling on top.
