Basil Fried Rice
Ingredients
- 2 cups cooked jasmine rice ideally from the day before.
- 1 cup diced shrimp tofu
- 1 cup of mixed veggies such as green beans, bell peppers, onions, and carrots.
- 3–4 cloves minced garlic from
- 1-2 finely chopped Thai bird's eye chilies according to your spice preference
- 2 TBSP Vegetable oil two tablespoons
- 1/2 cup soy sauce
- 1 tbsp oyster sauce for a vegetarian option, use hoisin sauce
- 1 tbsp Fish sauce omit for vegetarian option
- 1/8 cup sugar
- 1 cup of fresh leaves of Thai basil

When the mixed veggies are tender-crisp, add them and stir-fry for a short while longer. Add the chilled or day-old rice to the other side of the wok after pushing the ingredients to one side. Use your spatula to separate any rice clumps. Stir-frying the mixture will combine the sauce with the rice and other ingredients. Pour the sauce over the rice. At this point, if preferred, you can add fried or scrambled eggs and combine them with the rice. When everything is thoroughly blended and the basil wilts, add the fresh Thai basil leaves to the wok. When adjusting the spice, taste it and add extra soy sauce or fish sauce as desired. After turning off the heat, serve the basil fried rice immediately. Add more basil leaves or a lime slice as a garnish. Take pleasure in your handmade Thai basil fried rice.
